The Wall Street Journal recently took a look at how mixologists are once again making room in their cocktail tool kit for the blender.  Some of us have always enjoyed the frosty delights of a blended beverage (which they wrote was often referred to as “the floozy of the booze world”. Pshaw!). Their recipe for a Piña Colada (a “vacation in a glass”) is adapted from Giuseppe González of the Suffolk Arms in Manhattan and it’s pretty darn fine.  Get your Coolest pitcher ready!

Add 1½ ounces rum, 1½ ounces cream of coconut (preferably Coco López brand), 1½ ounces unsweetened pineapple juice, 4 large chunks pineapple and 1 pint ice to a blender. Blend until smooth, 30 seconds. Strain into a hurricane glass. (Hey, a solo cup will do just fine). Garnish with an orange slice.
